How would I go about listing my current job on a resume, if it's a private company, and I can't use the company name?

So, I currently work for a contractor that lists itself as a private company. I've worked here for 3 years. In all honesty, I was just promoted and love it, but the issue is that they have intermittent breaks, and this most recent break is now approaching 3 months without work. As such, I applied for unemployment; but in Florida I am required to apply to 5 jobs and visit a Career office every week. The problem is, I cannot list my current employer on my resume directly, as I signed an NDA saying I can only refer to the company as "Private Company." In addition, I am unable to list what I did. What I am allowed to say is "I was translator at a private company," and that's it, Which is actually a misleading statement, because I don't actually do any translation. I also feel weird just omitting it, because that would make it look like my last job was in 2021. I am only looking for temp jobs, so it's not the end of the world. However, my employer is on all the job sites and constantly doing background checks, so it's not like I can just do it and think they won't know.
